    Introduction 

    Sonia M. Johnson is a Senior Public Health Environmentalist for the State of Alabama. Her passion for helping others and a love for learning new things inspired her to further her education in public health. Sonia is a recent graduate of New England Institute of Technology where she obtained her Masters degree in Public Health. Her research concentrated on identifying barriers to food safety adherence among vulnerable populations and the prevention of foodborne illness.  

    Sonia’s idea to assemble a training manual educating home cooks on food safety and foodborne illness prevention was developed during the Covid-19 pandemic. States were mandating the closure of restaurants thus forcing people to cook at home. Due to Sonia’s experience inspecting restaurants, family members and friends began to seek advice from her on how to stay safe while handling food. Sonia’s son is completing his last year of high school and will soon enter college as a new cook. She hopes this training will benefit him and others along the way. In her spare time, she enjoys gardening and traveling. Sonia’s goal is to promote health equity and food safety throughout the country in an effort to reduce foodborne illness cases.
